Coconut Cookies

Ingredients:
2 cups grated Dried Coconut / Kopra
4 cups All Purpose flour
1/2 cup Cashew nuts
3 cups powdered Sugar
5 - 6 Cardamom / Elakki
1/2 tsp Baking Soda
3 cups melted Ghee

Recipe:
Put sugar in a mixer, grind it to very fine powder and keep it aside. Put cashew nuts in a mixer and crush it for few seconds. Put dried coconut(grated) in a mixer and crush it for few seconds.

Put all purpose flour, powdered sugar, mashed cardamom powder, crushed coconut, cashew nuts and baking soda in a vessel and mix them well. Add melted ghee little by little, kneed and prepare the soft dough as shown in the picture below.

Preheat the microwave to 160 degree C in convection mode. Take lemon sized dough and make a round ball. Press it little bit to a round shape(1/4 inch thick) and place it over the microwave safe tray as shown in the picture below. (For oven, please follow the steps mentioned in Almond Cookies recipe.)

Place this cookies in a microwave (Lower shelf) and cook them at 160 degree C temperature for about 20 mins until the bottom part of the cookies turn light golden in colour.

Take the tray outside from the microwave and once they are cooled to room temperature, store them in an airtight container. The above mentioned ingredients will serve around 100 cookies.

Chocolate Chip Cookies

Ingredients:
2 cups All Purpose flour / Maida Hudi
3 Tbs Cocoa powder
3/4 - 1 cup(80 - 100 gms ) Choco Chips
1.5 cups powdered Sugar
1/2 tsp Venilla powder
1/4 tsp Baking Soda
1.5 cups melted Ghee

Recipe:
Put sugar in a mixer, grind it to very fine powder and keep it aside.

Put all purpose flour, powdered sugar, cocoa powder, venilla powder and baking soda in a vessel and mix them well. Add melted ghee little by little, kneed and prepare the soft dough as shown in the picture below. Add choco chips and mix well.

Preheat the microwave to 160 degree C in convection mode. Take lemon sized dough and make a round ball. Press it little bit to a round shape(1/4 inch thick) and place it over the microwave safe tray as shown in the picture below. (For oven, please follow the steps mentioned in Almond Cookies recipe.)

Place this cookies in a microwave (Lower shelf) and cook them at 160 degree C temperature for about 20 mins until the bottom part of the cookies turn light golden in colour.

Mixed flour Cookies

Ingredients:
2 cups All Purpose flour / Maida Hudi
1 cup Millet flour / Ragi Hudi
1 cup Wheat flour / Godhi Hudi
2.5 - 3 cups Sugar
5 - 6 Cardamom / Elakki
1/2 tsp Baking Soda
3 cups melted Ghee

Recipe:
Put sugar in a mixer, grind it to very fine powder and keep it aside.
Put all purpose flour, millet flour, wheat flour, powdered sugar, mashed cardamoms and baking soda in a vessel and mix them well. Add the melted ghee little by little, kneed and prepare the soft dough as shown in the picture below.

Preheat the microwave to 160 degree C in convection mode. Take lemon sized dough and make a round ball. Press it little bit to a round shape(1/4 inch thick) and place it over the microwave safe tray as shown in the picture below. (For oven, please follow the steps mentioned in Almond Cookies recipe.)

Eggless Cookies (Narayan Khatar, Nankatai) | ಬಿಸ್ಕತ್ತು (ನಾರಾಯಣ ಕಟಾರ್) | Bakery Style Cookies

Baked sweet snack from All Purpose flour


Ingredients (ಬೇಕಾಗುವ ಪದಾರ್ಥಗಳು):
1 cup All Purpose flour  |  ಮೈದಾ ಹುಡಿ
1/2 cup powdered Sugar  |  ಸಕ್ಕರೆ ಹುಡಿ
1/2 cup melted Ghee  |  ಕರಗಿದ ತುಪ್ಪ
1/4 tsp Cooking Soda  |  ಅಡುಗೆ ಸೋಡಾ
1/4 tsp Cardamom powder or Venilla Essence (Optional) |  ಏಲಕ್ಕಿ ಹುಡಿ ಅಥವಾ ವೆನಿಲ್ಲಾ ಎಸ್ಸೆನ್ಸ್ (ಬೇಕಿದ್ದರೆ ಮಾತ್ರ)
1/4 cup crushed Nuts (Optional)  |  ತರಿ-ತರಿಯಾಗಿ ಹುಡಿ ಮಾಡಿದ ಬೀಜಗಳು (ಬೇಕಿದ್ದರೆ ಮಾತ್ರ)

Recipe (ಮಾಡುವ ವಿಧಾನ):
Put sugar in a mixer and grind it to very fine powder as shown in the picture below. Put dry nuts to the mixer and crush them as shown in the picture below.

Put all purpose flour, crushed almonds, powdered sugar, powdered cardamoms or venilla powder/essence and cooking soda in a vessel and mix them well. Add the melted ghee little by little, kneed and prepare the soft dough. Preheat the oven to 300-350 degree F. (For microwave, please follow the steps mentioned Mixed Flour Cookies recipe.)


Put one aluminum foil/sheet over the oven tray. Take lemon sized dough and make a round ball. Press it little to a round shape(1/4 inch thick) and place it over the aluminium foil as shown in the picture below.
Place this cookies in a oven(Upper shelf) and cook them at 300-350 degree F temperature for about 15-20 mins until the bottom part of the biscuits turn light golden in color.
Take it outside from the oven and allow them to cool for about 5-10 mins.
Once they are cooled, store them in an airtight container. The above mentioned ingredients will serve 20-25 Cookies.
Other Cookies:

Tips (ಸಲಹೆ):
 * All Purpose flour can be replaced with Wheat flour but Cookies prepared using All Purpose flour is tastier
 * Instead of Ghee, Butter can be used but Cookies prepared using Ghee is crunchier
 * Adding Vanilla Essence, Cardamom powder, crushed nuts enhances the taste & flavour

 * ಮೈದಾ ಹುಡಿಯ ಬದಲಿಗೆ ಗೋಧಿ ಹುಡಿಯನ್ನು ಬಳಸಬಹುದು ಆದರೆ ಮೈದಾ ಹುಡಿಯಲ್ಲಿ ಮಾಡಿದ ಬಿಸ್ಕತ್ ಹೆಚ್ಚು ರುಚಿಯಾಗಿರುತ್ತದೆ
 * ತುಪ್ಪದ ಬದಲು, ಬೆಣ್ಣೆಯನ್ನು ಬಳಸಬಹುದು, ಆದರೆ ತುಪ್ಪದಲ್ಲಿ ಮಾಡಿದ ಬಿಸ್ಕತ್ ಹೆಚ್ಚು ಗರಿ-ಗರಿಯಾಗಿ ಬರುತ್ತದೆ
 * ತುಂಡು ಮಾಡಿದ ಬೀಜಗಳು, ವೆನಿಲ್ಲಾ ಎಸ್ಸೆನ್ಸ್ ಅಥವಾ ಏಲಕ್ಕಿ ಹುಡಿಯನ್ನು ಹಾಕುವುದರಿಂದ ಬಿಸ್ಕತ್ತಿನ ರುಚಿ ಹಾಗು ಪರಿಮಳ ಹೆಚ್ಚಾಗುತ್ತದೆ
