Medium Tender Jackfruit Curry (Belechekke Bendi) | ಬೇಳೆಚೆಕ್ಕೆ (ಮಧ್ಯಮ ಎಳೆ ಹಲಸಿನಕಾಯಿ) ಬೆಂದಿ

Medium Tender Raw Jackfruit in Coconut Gravy for Rice & Breakfast Items


Ingredients (ಬೇಕಾಗುವ ಪದಾರ್ಥಗಳು):
1/2 Medium Tender Raw Jackfruit (Belechekke)  |  ಬೇಳೆಚೆಕ್ಕೆ (ಮಧ್ಯಮ ಎಳೆ ಹಲಸಿನಕಾಯಿ)  
1/2 tsp Chilly powder  |  ಮೆಣಸಿನ ಹುಡಿ
Lemon sized Jaggery (Optional)  |  ನಿಂಬೆ ಗಾತ್ರದ ಬೆಲ್ಲ (ಬೇಕಿದ್ದರೆ ಮಾತ್ರ)
1/4 tsp Turmeric powder  |  ಅರಶಿನ ಹುಡಿ
1.5 cups grated Coconut  |  ತುರಿದ ತೆಂಗಿನಕಾಯಿ
3 - 4 Red Chillies  |  ಕೆಂಪು ಒಣ ಮೆಣಸು
3/4 - 1 tsp Coriander seeds  |  ಕೊತ್ತಂಬರಿ ಬೀಜ 
1/4 - 1/2 tsp Cumin seeds  |  ಜೀರಿಗೆ
Small grape sized Tamarind (Optional)  |  ದ್ರಾಕ್ಷೆ ಗಾತ್ರದ ಹುಣಸೆ ಹಣ್ಣು (ಬೇಕಿದ್ದರೆ ಮಾತ್ರ)
Salt to taste  |  ರುಚಿಗೆ ತಕ್ಕಷ್ಟು ಉಪ್ಪು
6 - 8 cloves Garlic  |  ಬೆಳ್ಳುಳ್ಳಿ
1 tsp Mustard seeds  |  ಸಾಸಿವೆ
1 - 2 strands Curry leaves  |  ಕರಿ ಬೇವಿನ ಸೊಪ್ಪು
4 - 5 tsp Oil  |  ಎಣ್ಣೆ 

Recipe (ಮಾಡುವ ವಿಧಾನ):



Apply little oil on your hands and cut the jackfruit into two halves. Take one half and cut it into medium sized long pieces and remove the inner part of it as shown in the picture below.

Separate the jackfruits as shown in the picture below.

Cut each jackfruit into 4-5 long pieces as shown in the picture below.

Put them in water for about 10-15 mins.

Remove all unwanted things, separate the seeds and jackfruit as shown in the picture below.


Put the jackfruit seeds in a pressure cooker container. Add little amount of salt, water and pressure cook.(1-2 whistles)

Put jackfruits in a thick bottomed vessel/pan. Add turmeric powder, chilly powder, salt, jaggary, little amount of water and cook them well by covering a lid. Once it is cooked, add cooked jackfruit seeds and mix them well.

Put red chillies, coriander seeds, cumin seeds in a pan. Add 1 tsp oil and fry them for about 2-3 mins in low flame until they give nice aroma. 

Put grated coconut, fried masala, tamarind in a mixer and grind it to smooth paste by adding sufficient amount of water. (If it is frozen coconut use hot water while grinding.) Add this ground masala to the vessel containing cooked jackfruit. Add required amount of salt, water and bring it to boil.

Remove the outer cover of garlic flakes, mash them and add them to a pan. Add 2-3 tsp oil to this pan and fry them in low flame for few minutes until they turn golden in color. Add mustard seeds. Once it starts spluttering, add curry leaves and add it to curry. Mix well before serving. It goes well with Rice, Rotti, Chapathis.

Tips (ಸಲಹೆ):
 * Apply oil to hands before cutting to reduce sticking of wax 
 * Jackfruit can be refrigerated for abt 3-4 hrs before cutting to reduce the wax in it
 * If you are using frozen / refrigerated Coconut, use hot Water while grinding
 * Instead of frying, the Masala ingredients can be used as is while grinding it with Coconut

 * ಹೆಚ್ಚುವ ಮೊದಲು ಕೈಗೆ ಸ್ವಲ್ಪ ಎಣ್ಣೆ ಹಚ್ಚುವುದರಿಂದ ಮೇಣ ಕೈಗೆ ಅಷ್ಟು ಅಂಟಿಕೊಳ್ಳುವುದಿಲ್ಲ 
 * ಹೆಚ್ಚುವ ಮೊದಲು ಹಲಸಿನಕಾಯಿಯನ್ನು ಫ್ರಿಡ್ಜ್ ನಲ್ಲಿ ಇಟ್ಟರೆ (3-4 ಗಂಟೆ) ಮೇಣ ಕಡಿಮೆ ಬರುತ್ತದೆ
 * ಫ್ರಿಡ್ಜ್/ ಫ್ರೀಜರ್ ನಲ್ಲಿ ಇಟ್ಟ ಕಾಯಿತುರಿಯನ್ನು ಉಪಯೋಗಿಸುವುದಾದರೆ, ರುಬ್ಬುವಾಗ ಬಿಸಿ ನೀರನ್ನು ಬಳಸಿ
 * ಮಸಾಲೆಯನ್ನು ಹುರಿಯದೆ, ಹಾಗೆಯೇ ತೆಂಗಿನಕಾಯಿ ಜೊತೆ ಅರೆದು ಕೂಡ ಬಳಸಬಹುದು

Tasty side dish for Rice or Chapathi from Medium Tender Jackfruit


Ingredients:
1/2 Medium Tender Raw Jackfruit (Belechekke)  |  ಬೇಳೆಚೆಕ್ಕೆ (ಮಧ್ಯಮ ಎಳೆ ಹಲಸಿನಕಾಯಿ)  
1.5 - 2 tsp Chilly powder  |  ಮೆಣಸಿನ ಹುಡಿ
Lemon sized Jaggery (Optional)  |  ನಿಂಬೆ ಗಾತ್ರದ ಬೆಲ್ಲ (ಬೇಕಿದ್ದರೆ ಮಾತ್ರ)
1/4 tsp Turmeric powder  |  ಅರಶಿನ ಹುಡಿ
Salt to taste  |  ರುಚಿಗೆ ತಕ್ಕಷ್ಟು ಉಪ್ಪು
1/4 cup finely grated Coconut  |  ತುರಿದ ತೆಂಗಿನಕಾಯಿ
2 strands Curry leaves  |  ಕರಿ ಬೇವಿನ ಸೊಪ್ಪು
2 tsp Black Gram seeds  |  ಉದ್ದಿನಬೇಳೆ
1 tsp Mustard seeds  |  ಸಾಸಿವೆ
1 - 2 broken Red Chillies  |  ಕೆಂಪು ಒಣ ಮೆಣಸಿನ ತುಂಡು
3 - 4 tsp Oil  |  ಎಣ್ಣೆ

Put cleaned jackfruit pieces in a thick bottomed vessel/pan. Add turmeric powder, chilly powder, salt, jaggery, water (Around 1.5 cups) and cook them well by covering a lid. 

Once it is cooked, add cooked jackfruit seeds and mix them well. 

Once the water content is almost dried, add grated coconut and keep the palya in low flame for about 4-5 mins.


Put black gram seeds, mustard seeds, 1-2 red chilly pieces and oil in a pan. Once it starts spluttering, add curry leaves and add it to palya. Mix well before serving. It goes well with Rice, Chapathis.

Tips (ಸಲಹೆ):
 * Jackfruit can be refrigerated for abt 3-4 hrs before cutting to reduce the wax in it.
