Monkey Jack (Unde Huli) Rasam | ಉಂಡೆ (ಕೆತ್ತೆ, ಚೆಂಡು) ಹುಳಿ ಸಾರು (ರಸಂ)

Rasam from Monkey Jack can be served as Soup!

 

Ingredients (ಬೇಕಾಗುವ ಪದಾರ್ಥಗಳು):
1/4 medium sized Monkey Jack (Artocarpus Lacucha, Unde (Kette, Chendu) Huli)  |  ಉಂಡೆ (ಕೆತ್ತೆ, ಚೆಂಡು) ಹುಳಿ 
Lemon sized Jaggery  |  ನಿಂಬೆ ಗಾತ್ರದ ಬೆಲ್ಲ
1 - 2 Green Chillies  |  ಹಸಿಮೆಣಸು
1/3 tsp Turmeric powder  |  ಅರಶಿನ ಹುಡಿ
Salt to taste  |  ರುಚಿಗೆ ತಕ್ಕಷ್ಟು ಉಪ್ಪು 
3/4 tsp Mustard seeds  |  ಸಾಸಿವೆ
1/4 tsp Cumin seeds  |  ಜೀರಿಗೆ
Pinch of Asafoetida  |  ಚಿಟಿಕೆ ಇಂಗು
1 - 2 broken Red Chilly pieces  |  ಕೆಂಪು ಒಣ ಮೆಣಸಿನ ತುಂಡು
1 - 2 strand of Curry leaves  |  ಕರಿ ಬೇವಿನ ಸೊಪ್ಪು 
1 - 2 tsp Oil  |  ಎಣ್ಣೆ

Recipe (ಮಾಡುವ ವಿಧಾನ):
Chop the Monkey Jack into small pieces as shown in the picture below. Cut the green chillies into two halves.

Put chopped Monkey Jack, green chillies, salt, jaggery, turmeric powder and around 1 litre of water and cook this in medium flame for about 8-10 mins.


Put mustard seeds, cumin seeds, broken red chillies, oil in a pan and heat. Once it starts spluttering, add asafoetida powder, curry leaves and keep it for few seconds and then add it to Rasam. Mix well before serving. It goes well with Rice. It can also be served as soup.

Vegetable Clear Soup

Ingredients:
1/2 medium sized Carrot
3 - 4 Beans
1 Baby Corn
5 - 6 Tulsi leaves
8 - 10 Mint leaves
4 - 5 Spinach leaves
2 - 3 Coriander leaves
Pinch of Pepper powder
1/4 - 1/2 tsp fresh Lemon Juice
5 - 6 Black Pepper
Salt to taste
5 cups of Water
1 tsp Oil

Recipe:
Chop the vegetables as shown in the picture below.

Put 1 tsp oil in a pan and heat. Add black pepper, chopped vegetables and fry them in medium/low flame for about 2-3 mins until they are semi cooked. Add chopped leaves(Mint, Spinach and Coriander leaves) and fry them for about 2-3 mins.

Put 5 cups of water in a vessel. Add all the fried vegetables, salt, pepper powder and bring them to boil.

Keep this in medium flame for about 2-3 mins. Add lemon juice and keep the soup in medium flame for about few seconds.

Transfer this to a soup bowl and serve hot.

Mixed Vegetable Soup

Ingredients:
Small piece of Carrot
2 florets of Broccoli
2 - 3 tsp Corn Kernels
2 - 3 tsp Frozen Green Peas
3 tsp Corn flour
Pinch of Pepper powder
Salt to taste
3 cups of Water

Recipe:
Chop the carrot into one inch long thin pieces as shown in the picture below. Cut the broccoli into medium sized pieces as shown in the picture below.

Take little amount of water in a bowl and add the corn flour. Mix them well and keep aside.

Put 3 cups of water in a vessel. Add all the vegetables, salt and bring them to boil. Keep this in medium flame for about 2-3 mins. Add corn flour water and bring them to boil. Add pepper powder and keep the soup in medium flame for about 1 min.

Transfer this to a soup bowl and serve hot.

Tomato Soup

Ingredients:

2 medium sized Tomatoes

1 strand of Celery

Small piece of Capsicum / Bell Pepper

3-4 leaves of Basil or Tulasi

1/4 small Onion

Small piece of Ginger

1-2 pods of Garlic

1/4 tsp Black Pepper powder

1/2 tsp Sugar

1 tsp All Purpose flour

4-5 toasted or fried Bread pieces

1/4 cup Whipping Cream or Milk

Salt to taste

1/4 tsp Cumin seeds

2 tsp Butter

Recipe:

Chop tomatoes, capsicum, celery, onion, ginger, garlic into medium sized pieces as shown in the picture below.

Put 1 tsp butter in a pan and heat. Add cumin seeds and fry. Once it starts spluttering, add ginger, garlic pieces and fry them for about 1 min in medium flame. Add chopped onion, celery, capsicum and fry them for about 2-3 mins in medium flame. Add chopped tomatoes, basil/tulasi, salt, pepper powder and saute them for about 1 min.

Add around half cup of water and cook them well by covering a lid.

Once the tomato mixture is cooked, put them in a blender and grind them into smooth paste. Strain the ground mixture to get rid of the pulp ingredients.

Put 1 tsp butter, around 1 tsp all purpose flour and fry them in low flame until it turns light golden in color. Add strained tomato puree slowly and mix them well. Bring them to boil. Add the sugar and keep the soup in low flame for about 10 mins. (Add salt if required). Add whipping cream and mix them well. Transfer this to a soup bowl, add 4-5 pieces of fried bread and serve.
