Home Made Chocolate | ಹೋಂ ಮೇಡ್ (ಮನೆಯಲ್ಲೇ ತಯಾರಿಸಿದ) ಚಾಕಲೇಟ್

Quick & tasty chocolate !! 

Ingredients (ಬೇಕಾಗುವ ಪದಾರ್ಥಗಳು):

1 cup Coconut Oil (Cocoa Butter | Butter)  |  ತೆಂಗಿನ ಎಣ್ಣೆ (ಕೋಕೋ ಬೆಣ್ಣೆ | ಬೆಣ್ಣೆ)
1 cup powdered Sugar  |  ಸಕ್ಕರೆ ಹುಡಿ
1 cup Milk powder  |  ಹಾಲಿನ ಹುಡಿ
3 Tbs Cocoa powder  |  ಕೋಕೋ ಹುಡಿ
5-10 drops (1/4 tsp) of Vanilla Essence  |  5-10 ಬಿಂದು (1/4 ಚಮಚ) - ವೆನಿಲ್ಲಾ ಎಸೆನ್ಸ್
2 tsp crushed dry Nuts (Optional)  |  ತುಂಡು ಮಾಡಿದ ಒಣ ಬೀಜಗಳು (ಬೇಕಿದ್ದರೆ ಮಾತ್ರ)

Recipe (ಮಾಡುವ ವಿಧಾನ):

Put Milk powder, Sugar powder, Cocoa powder in a vessel and mix.

Put around 3/4 litre of water in a pan and bring it to boil. Keep another vessel and add the butter | coconut oil and melt as shown in the picture below.


Add the mixed dry ingredients, vanilla essence and mix then well. The consistency should be thick as shown in the picture below.


Put it in a chocolate mould and spread as shown in the picture below.


Put it in a freezer for about 2-3 hrs. Remove the chocolate from the mould and serve. Store it in freezer or refrigerator. 

Tips (ಸಲಹೆ):
 * If you do not like the smell of coconut oil, you can replace it with cocoa butter or plain butter but it will not be harder as prepared using coconut oil
 * Chocolate will melt if it is exposed to room temperature
 * If you do not have mould, regular tray or plate can be used. Once the chocolate becomes little hard, it can be cut into pieces using a knife

 * ತೆಂಗಿನ ಎಣ್ಣೆಯ ಪರಿಮಳ ಇಷ್ಟವಾಗದವರು ಕೋಕೋ ಬೆಣ್ಣೆ | ಬೆಣ್ಣೆಯನ್ನು ಬಳಸಬಹುದು, ಆದರೆ ಬೆಣ್ಣೆಯಲ್ಲಿ ಮಾಡಿದ ಚಾಕಲೇಟ್ ತೆಂಗಿನ ಎಣ್ಣೆಯಲ್ಲಿ ಮಾಡಿದಷ್ಟು ಗಟ್ಟಿಯಾಗಿ ಬರುವುದಿಲ್ಲ
 * ಸಾಮಾನ್ಯ ತಾಪಮಾನದಲ್ಲಿ ಚಾಕಲೇಟ್ ಬೇಗನೆ ಕರಗಿ ನೀರಾಗುತ್ತದೆ
 * ಚಾಕಲೇಟ್ ಹಾಕಲು ಅಚ್ಚು ಇಲ್ಲದಿದ್ದರೆ ಒಂದು ತಟ್ಟೆಯಲ್ಲಿ ಹಾಕಿ, ಸ್ವಲ್ಪ ಗಟ್ಟಿಯಾದ ಮೇಲೆ, ಒಂದು ಚೂರಿಯಲ್ಲಿ ಬೇಕಾದ ಆಕೃತಿಯಲ್ಲಿ ಕತ್ತರಿಸಿಕೊಳ್ಳಿ

Vegetable Pizza (Thin Crust)

Ingredients:

Common Ingredients:
1.5 cups All Purpose flour
1.5 cups Wheat flour
3 - 4 tsp Oregano Mix / Piza Seasoning 
1 - 2 tsp Chilly flakes

Ingredients for Pizza Base using Yeast:
1/2 tsp Dry Yeast
1 tsp Sugar
2 tsp Oil

Ingredients for Pizza Base using Baking Powder / Cooking Soda:
1 tsp Baking powder
1/3 tsp Cooking Soda
3/4 - 1 cup Curd / Yogurt
3 - 4 tsp Oil

Ingredients for Topping:
1 medium sized Onion
1 medium sized Tomato
Few spinach leaves (Optional)
1/2 medium sized Capsicum
Few pieces of Cauliflower
Small Eggplant / Brinjal / Badanekayi (Optional)
150 grams of Mozzarella Cheese
8 - 10 tsp Pizza Sauce
Salt to taste
Butter

Recipe:
Chop vegetables into thin slices as shown in the picture below. Add little buttermilk, water, salt in a vessel and put the chopped eggplant and keep it aside for 5-10 mins. Drain the water and keep it aside. Put the cauliflower in a boiling water, add salt, little turmeric powder, boil it for 1-2 mins. Drain the water and keep it aside. Do the same step even for spinach. Sprinkle little salt over the remaining chopped vegetables.

Recipe of Pizza Base using Cooking Soda / Baking Powder:
Mix wheat flour, all purpose flour, salt, 1 tsp oregano mix, coking soda, baking powder in a vessel. Knead the dough by adding sufficient amount of curd and prepare a smooth dough(let it be little sticky). Add 3-4 tsp oil and mix them well.


Recipe of Pizza Base using Yeast:
Put dry yeast, sugar in a bowl. 

Add around 1/4 cup of lukewarm water and keep it aside for about 15 mins until yeast gets activated as shown in the picture below.

Mix wheat flour, all purpose flour, salt, 1 tsp oregano mix, yeast mix in a vessel. Knead the dough by adding sufficient amount of water and prepare a smooth dough(let it be little sticky). Add 2 tsp oil and mix them well.

Keep this aside at least for 2 hrs until it doubles in size. Mix them well and divide the dough into 3/4 equal parts. 


Divide the dough into 3 equal parts and take one part and make a round ball. Roll the ball to a thick Chapathi(Nearly 1/4 inch thick) by using sufficient amount of dry wheat flour as shown in the picture below.  Place the chapati in microwave safe plate(Preferred: Nonstick).

Prick it using a fork and spread around 3 tsp pizza sauce as shown in the picture below.

Add the vegetable toppings, sprinkle little oregano mix, apply little oil/butter to the edges of the pizza.

Sprinkle around 3-4 tsp grated mozzarella cheese as shown in the picture below. Apply little amount of melted butter to the edges of the pizza base.

Preheat the oven in convection mode in 200 degree Celsius temperature. Bake the pizza for about 12- 15 mins. Sprinkle red chilly flakes, oregano mix and serve hot. The above mentioned ingredients will serve 3 think crust pizzas. I tried this recipe from CookingShooking. Thanks for the recipe.

Vegetable Pasta

Ingredients:
250 grams of Pasta
1 medium sized Onion
1 medium sized Capsicum
Small piece of Cabbage
1 medium sized Carrot
Few Basil / Tulsi leaves
1/2 - 3/4 tsp Ginger Garlic paste / grated Ginger and Garlic
3 - 4 tsp grated Mozzarella Cheese
8 - 10 tsp Pizza Sauce
2 - 3 tsp Oregano Mix
Salt to taste
5 - 6 tsp Oil

Recipe:
Chop vegetables into thin slices as shown in the picture below.

Cook the pasta by adding sufficient amount of water, salt and 1-2 drops of oil for about 15-20 mins.

Drain the water and keep the pasta aside.

Put 4-5 tsp oil in a heavy bottomed vessel and heat. Add ginger garlic paste and fry them for about 2 mins in low flame. Add basil leaves, chopped onion and fry them for about 3-4 mins in low flame.

Add remaining chopped vegetables, salt and saute them in medium flame for about 4-5 mins.


Add oregano mix, pizza sauce and mix them well.

Add cooked pasta and mix them well and keep it in low flame for about 2-3 mins.

Transfer this to a microwave safe bowl, sprinkle grated cheese as shown in the picture below.

Microwave for 5-6 mins until the cheese melts.

Mix them well and serve hot.

Roasted Jackfruit Seeds

Ingredients:
1 cup Jackfruit seeds

Recipe:

Dry roast the Jackfruit seeds in a heavy bottommed vessel for about 20-30 mins in low flame until it is cooked. (By covering the lid and keep stirring in between.)


Remove the skin and serve hot as is or along with salt and chilly/pepper powder.

Boiled Peanuts / Beyisida Kadle

Ingredients:
5 cups Raw peanuts with shell
Salt to taste
Water

Recipe:
Wash the raw peanuts 3-4 times in water.

Put this in a pressure cooker. Add required amount salt and water (until the peanuts are immersed in water as shown in the picture below) and mix them well.

Pressure cook for about 10-15 mins(4-5 whistles). Once the pressure goes off, drain the excess water and serve hot.

Cocoa Powder

Ingredients:
1 cup Cocoa Seeds

Recipe:

Remove the cocoa seeds from Cocoa fruit, wash them properly in water for 2-3 times.

Sun dry the seeds for about 6-8 days.

Dry roast the cocoa seeds in a pan or microwave and keep it aside for about 30 mins until it comes to room temperature.

Remove the outer skin and put them in a mixer.

Grind it to smooth powder as shown in the picture below. Use this while making Ice cream, Cakes, Cookies, Burfi, Laddu, etc. Store it in an airtight container. Store this in a refrigerator for longer shelf life.
