Chakkuli (Chakli | Chakali) | ಚಕ್ಕುಲಿ (ಚಕ್ಲಿ)

Crispy deep fried Indian snack from Rice & Lentils!


Ingredients (ಬೇಕಾಗುವ ಪದಾರ್ಥಗಳು):
4 cups White Rice  |  ಬೆಳ್ತಿಗೆ ಅಕ್ಕಿ  (Preferred: Sona Masuri / Broken Steam Rice)
2 cups Black Gram seeds  |  ಉದ್ದಿನಬೇಳೆ
1/2 - 3/4 cup Butter  |  ಬೆಣ್ಣೆ
1 - 2 tsp Sesame seeds  |  ಎಳ್ಳು
3/4 - 1 tsp Cumin seeds  |  ಜೀರಿಗೆ
Salt to taste  |  ರುಚಿಗೆ ತಕ್ಕಷ್ಟು ಉಪ್ಪು
Oil for frying  |  ಕರಿಯಲು ಎಣ್ಣೆ

Recipe (ಮಾಡುವ ವಿಧಾನ):
Take 2 cups of black gram seeds in a pan and fry it in a microwave or stove until it gives nice aroma by without adding any oil. Once it is cooled, make smooth powder by grinding it in a mixer as shown in the picture below.
Soak white rice in water for about 3-4 hrs. Grind soaked rice into smooth thick paste by adding sufficient amount of water. Add butter, salt, cumin seeds and mix them well.

Add prepared black gram seeds powder to the same vessel and mix them well. Add water if required. (Don't make the dough too thin.) Kneed the dough properly.
Fill the Chakkuli maker with this dough and press it into round shape in a plastic sheet as shown in the picture below.
Keep oil in a thick bottomed vessel and heat. Put pressed Chakkulis to hot oil and deep fry until they turn golden in color. Once they are cooled to room temperature, keep them in an airtight container.  Serve along with coffee or tea.

Tips (ಸಲಹೆ): 
 * Use good quality of White Rice
 * Grind the rice into very fine paste
 * Instead of ground rice batter, rice flour can also be used. For authentic taste, use ground rice batter
 * Sieve the black gram seeds powder to avoid bursting while frying
 * Adding butter to rice batter & mixing it properly makes the Chakkuli crunchy & crispy
 * Chakkulis should be properly immersed in oil & deep fried in medium flame with frequent stirring
 * If the holes of the 'Chakkuli Presser' are bigger, it will take little more time to cook & chakkulis will turn brown color
 * While pressing the Chakkuli, if it breaks, add little water to the batter & mix
 * Mix the batter before putting it to 'Chakkuli Presser' each time

 * ಅಕ್ಕಿಯ ಬದಲಿಗೆ ಅಕ್ಕಿ ಹುಡಿಯನ್ನು ಬಳಸಬಹುದು, ಆದರೆ ತಾಜಾ ರುಚಿ ಬರಲು ರುಬ್ಬಿದ ಅಕ್ಕಿ ಹಿಟ್ಟನ್ನು ಬಳಸಿ
 * ಚಕ್ಕುಲಿಯು ಎಣ್ಣೆಯಲ್ಲಿ ಸಿಡಿಯದಂತೆ ಉದ್ದಿನ ಬೇಳೆ ಹುಡಿಯನ್ನು ಜರಡಿ ಹಿಡಿಯಿರಿ
 * ಬೆಣ್ಣೆಯನ್ನು ರುಬ್ಬಿದ ಅಕ್ಕಿ ಹಿಟ್ಟಿಗೆ ಹಾಕಿ ಚೆನ್ನಾಗಿ ಕಲೆಸಿಕೊಳ್ಳುವುದರಿಂದ ಚಕ್ಕುಲಿಯು ಮೃದುವಾಗುತ್ತದೆ
 * ಚಕ್ಕುಲಿಯನ್ನು ಎಣ್ಣೆಯಲ್ಲಿ ಸಂಪೂರ್ಣವಾಗಿ ಮುಳುಗಿಸಿ ಆಗಾಗ ತಿರುವುತ್ತಾ ಮಧ್ಯಮ ಉರಿಯಲ್ಲಿ ಕರಿಯಿರಿ
 * ಚಕ್ಕುಲಿ ಬಿಲ್ಲೆಯ ತೂತು ದಪ್ಪಗಿದ್ದರೆ, ಚಕ್ಕುಲಿ ಬೇಯಲು ಸ್ವಲ್ಪ ಹೆಚ್ಚು ಸಮಯ ಬೇಕಾಗುತ್ತದೆ ಹಾಗು ಚಕ್ಕುಲಿಯು ಸ್ವಲ್ಪ ಕೆಂಪಗಾಗುತ್ತದೆ
 * ಚಕ್ಕುಲಿ ಒತ್ತುವಾಗ ತುಂಡು- ತುಂಡಾಗಿ ಬಿದ್ದರೆ, ಸ್ವಲ್ಪ ನೀರು ಹಾಕಿ ಕಲೆಸಿಕೊಳ್ಳಿ
 * ಹಿಟ್ಟನ್ನು ಪ್ರತಿ ಸಲ ಅಚ್ಚಿಗೆ ಹಾಕುವ ಮೊದಲು ಒಮ್ಮೆ ಕಲೆಸಿಕೊಳ್ಳಿ
