Papaya (Raw) Rotti | ಪಪ್ಪಾಯ (ಕಾಯಿ) ರೊಟ್ಟಿ

Quick, tasty & healthy Indian flat bread made from Raw Papaya!


Ingredients (ಬೇಕಾಗುವ ಪದಾರ್ಥಗಳು):
7 cups finely grated Raw Papaya  |  ಸಣ್ಣಗೆ ತುರಿದ ಕಾಯಿ ಪಪ್ಪಾಯ
1.5 cups grated Coconut  |  ತುರಿದ ತೆಂಗಿನಕಾಯಿ
4 - 6 Green Chillies  |  ಹಸಿಮೆಣಸು
12 - 15 strands of Curry leaves  | ಎಳೆ ಕರಿ ಬೇವಿನ ಸೊಪ್ಪು
1/4 inch Ginger  |  ಇಂಚು ಶುಂಠಿ
2 large Onions  |  ದೊಡ್ಡ  ಈರುಳ್ಳಿ
12 - 15 strands of Coriander leaves  |  ಎಳೆ ಕೊತ್ತಂಬರಿ ಸೊಪ್ಪು
1 cup Bombay Rava  |  ಸಣ್ಣ ಸಜ್ಜಿಗೆ (ಬಾಂಬೆ ರವಾ)
3 cups thick Rice Batter  |  ಗಟ್ಟಿಯಾಗಿ ರುಬ್ಬಿದ ಅಕ್ಕಿ ಹಿಟ್ಟು 
1 cup Rice flour  |  ಅಕ್ಕಿ ಹುಡಿ
Salt to taste  |  ರುಚಿಗೆ ತಕ್ಕಷ್ಟು ಉಪ್ಪು
Banana Leaves or Wax paper  |  ಬಾಳೆ ಎಲೆ ಅಥವಾ ವ್ಯಾಕ್ಸ್ ಪೇಪರ್ 
Ghee or Oil  |  ತುಪ್ಪ ಅಥವಾ ಎಣ್ಣೆ

Recipe (ಮಾಡುವ ವಿಧಾನ):
Remove the outer skin of Papaya, and finely grate it as shown in the picture below.

Soak the semolina in water(add around 1/2 cup of water) for about 30 mins. Add rice batter, rice flour and mix them well.

Put grated coconut, green chillies, curry leaves, ginger in a mixer and crush them without adding any water as shown in the picture below.

Chop the onion, coriander leaves into small pieces as shown in the picture below.

Add these crushed ingredients,  grated papaya, chopped onion, coriander leaves, salt and mix them well.(Add water if required) The consistency of the dough should be as shown in the picture below.

Take one banana leaf/ aluminium foil (For aluminium foil: put 1 tsp of oil and spread it over the foil). Take handful of dough and spread it over the banana leaf evenly as shown in the picture below.


Heat the Tava(Iron Tava preferred) put the Rotti upside down as shown in the picture below. Cook it for a minute by covering the lid.

Remove the banana leaf and spread 1-2 tsp ghee/oil over the Rotti and cook other side of the Rotti for about 2-4 min in medium/low flame.


Serve hot along with any curry or chutney. The above mentioned ingredients will serve around 20 Rottis.


Tips (ಸಲಹೆ): 
 * To pat thin rottis, papaya should be finely grated
 * If you don't have Banana leaves, you can use Wax Paper or Aluminium foil by applying little oil on it
 * To prepare the thick rice batter: Soak required amount of white rice in water for about 2-6 hrs. Wash it & grind it into smooth thick paste by adding sufficient amount of Water & Salt in a Grinder | Mixer. If the batter is thin, keep it in refrigerator for about 4 hrs & drain the water. Remaining batter can be stored in freezer & can be used whenever needed
 * If you don't have thick Rice batter, you can use the Rice flour but it won't be as tasty as using Rice batter

 * ಬಾಳೆ ಎಲೆ ಇಲ್ಲದಿದ್ದರೆ, ವ್ಯಾಕ್ಸ್ ಪೇಪರ್ ಅಥವಾ ಅಲ್ಯೂಮಿನಿಯಂ ಫಾಯಿಲ್ಗೆ ಸ್ವಲ್ಪ ಎಣ್ಣೆ ಹಚ್ಚಿ ಬಳಸಬಹುದು
 * ಗಟ್ಟಿ ಅಕ್ಕಿ ಹಿಟ್ಟನ್ನು ತಯಾರು ಮಾಡಲು: ಬೇಕಷ್ಟು ಬೆಳ್ತಿಗೆ ಅಕ್ಕಿಯನ್ನು 2-6 ಗಂಟೆ ನೀರಿನಲ್ಲಿ ನೆನೆ ಹಾಕಿ. ಚೆನ್ನಾಗಿ ತೊಳೆದು, ಬೇಕಷ್ಟು ನೀರು, ಉಪ್ಪು ಹಾಕಿ ಗ್ರೈಂಡರ್ | ಮಿಕ್ಸರಿನಲ್ಲಿ ಗಟ್ಟಿಯಾಗಿ ನುಣ್ಣಗೆ ರುಬ್ಬಿ. ಹಿಟ್ಟು ನೀರಿದ್ದಲ್ಲಿ, ಫ್ರಿಡ್ಜಿನಲ್ಲಿ 4 ಗಂಟೆಗಳ ಕಾಲ ಹಾಗೆ ಇಟ್ಟು, ಮೇಲಿನ ನೀರನ್ನು ಬಸಿಯಿರಿ. ಉಳಿದ ಹಿಟ್ಟನ್ನು ಫ್ರೀಝರಿನಲ್ಲಿ ಇಟ್ಟು ಬೇಕಾದಾಗ ಉಪಯೋಗಿಸಬಹುದು.
 * ಗಟ್ಟಿಯಾಗಿ ರುಬ್ಬಿದ ಅಕ್ಕಿ ಹಿಟ್ಟು ಇಲ್ಲದಿದ್ದರೆ, ಅಕ್ಕಿ ಹುಡಿಯನ್ನೇ ಬಳಸಬಹುದು. ಆದರೆ ರುಬ್ಬಿದ ಅಕ್ಕಿ ಹಿಟ್ಟನ್ನು ಹಾಕಿ ಮಾಡಿದ ರೊಟ್ಟಿಯಷ್ಟು ರುಚಿಯಾಗುವುದಿಲ್ಲ

Aappam

Ingredients:
1.5 cups White Rice (Preferred: Sona Masuri)
1.5 cups grated Coconut
1/3 tsp Dry Yeast
1 tsp Sugar
Salt to taste
Aappam Tawa / Chatti

Recipe:
Soak rice in water for about 6-8 hrs. Wash soaked rice 2-3 times and keep them aside.

Put 1/3 tsp dry east in a bowl. Add sugar and 1/4 cup of Luke warm water and mix them well. Keep it aside for about 30 mins.


Grind soaked rice, grated coconut into smooth paste by adding sufficient amount of water.

Take 2 Tbs of prepared batter, around 1/2 cup of water and mix them well and put it in a thick bottomed vessel/pan. Heat it in low/medium flame and keep stirring the batter until all the water content gets evaporated and forms a thick batter as shown in the picture below.


Add the above mix and east mix to the already ground batter and grind them together for about 1 min. Pour this to a vessel and ferment the batter for about 6-8 hrs.

Add required amount of salt, water and mix them well. The consistency of the batter should be like that of milk.

Heat the Aappam Chatti and pour the little amount of batter as shown in the picture below.

Immediately turn around the Chatti to spread the batter evenly as shown in the picture below.

 Cover the lid and cook this for about 2-3 mins in low/medium flame.

Serve hot with ghee or coconut oil along with Kurma / Veg Stew / Chutney or Sambar.  The ingredients mentioned above will serve around 15 Aappams. I tried this recipe from Link. Thanks for the recipe.
