Ingredients:
2 cups medium sized Semolina / Sajjige
1/2 tsp Black Gram seeds
1/2 tsp Mustard seeds
1 tsp Bengal Gram seeds
1.5-2 tsp broken Cashew nuts
Small piece of Ginger
6-7 Curry leaves
2-3 Green Chillies
Pinch of Baking powder
4-5 strands of Coriander leaves
2.5 - 3 cups Curd
Salt to taste
2-3 tsp Oil
Recipe:
Chop green chillies, ginger, curry leaves into small pieces as shown in the picture below.
Put oil, mustard seeds, black gram seeds, bengal gram seeds, cashew nuts in a thick bottomed vessel and fry. Once it starts spluttering add chopped green chillies, ginger, curry leaves and fry them for few seconds. Add semolina and fry them for about 5-6 mins in medium flame until it starts giving nice aroma. Let it cool to room temperature.
Add this fried semolina in a vessel. Add salt, baking soda and mix well. Add 1 cup of curd and mix well. Add chopped coriander leaves and mix well. Add remaining curd and mix well. The consistency of the batter should be that of thick milkshake.

For Rava Idli.. we need to use the medium sized Semolina... If we use Sanna Rave/Chiroti Rave.. Idli becomes sticky....

Once when we visited Gokarna , we were served idli made of Uddin Bele and uppittin rave. The host said that they do not use rice but use rave. Can you please tell me the method for the same.

Adding of baking soda, makes Idli very soft.... Hope you have added Baking Soda....
