Ivy Gourd (Tindora, Thondekayi) Fryums (Sandige) | ತೊಂಡೆಕಾಯಿ ಸಂಡಿಗೆ ~ 2 Types (ವಿಧ)

Sun dried Ivy Gourd, an accompaniment with Rice Meals!


Ingredients (ಬೇಕಾಗುವ ಪದಾರ್ಥಗಳು):
Type 1 (ವಿಧಾನ 1):
2 Kgs Ivy Gourd (Tindora, Thondekayi)  |  ತೊಂಡೆಕಾಯಿ
2 cups Sour Buttermilk  |  ಹುಳಿ ಮಜ್ಜಿಗೆ
Big pinch of Asafoetida  |  ದೊಡ್ಡ ಚಿಟಿಕೆ ಇಂಗು
Salt to taste  |  ರುಚಿಗೆ ತಕ್ಕಷ್ಟು ಉಪ್ಪು

Type 2 (ವಿಧಾನ 2):
1 Kg Ivy Gourd (Tindora, Thondekayi)  |  ತೊಂಡೆಕಾಯಿ
1/2 - 3/4 tsp Chilly powder  |  ಮೆಣಸಿನ ಹುಡಿ
1/3 tsp Turmeric powder  |  ಅರಶಿನ ಹುಡಿ
Big pinch of Asafoetida  |  ದೊಡ್ಡ ಚಿಟಿಕೆ ಇಂಗು
Salt to taste  |  ರುಚಿಗೆ ತಕ್ಕಷ್ಟು ಉಪ್ಪು

Recipe (ಮಾಡುವ ವಿಧಾನ):
Wash the ivy gourds, remove the edges and cut them into medium thin long pieces as shown in the picture below.

Type 1:
Put Ivy gourd pieces, salt, Asafoetida, buttermilk in a vessel. Mix or toss them well, cover the lid and keep it overnight.

Next day morning, remove the Ivy gourd pieces from the buttermilk and spread it in a plastic sheet | Areca Leaf | Plate and sun dry.

In the evening put it back to left over buttermilk, mix well. Cover the lid and keep it overnight. Next day morning sun dry & repeat this step until all the buttermilk is over (1-2 days). 

Sun dry this for next 6-8 days. Store them in an airtight container.

Fry this in oil and serve. 

It goes well with Rice with Curd, Thambli, Raitha, Majjige Huli etc.

Type 2: 
Put 1 cup of water in a vessel, add salt, chilly powder, turmeric powder and bring it to boil.

Add the chopped ivy gourds and cook them in medium high flame until water content gets evaporated.


Spread it in a Areca Leaf | Plastic Sheet or Plate and sun dry for 6-8 days. Store them in an airtight container.


Fry this in oil and serve. It goes well with Rice with Curd, Thambli, Raitha, Majjige Huli etc.


Tips (ಸಲಹೆ):
 * Store the properly dried Fryums in airtight containers or plastic covers. If not, it will get spoilt soon.

 * ಚೆನ್ನಾಗಿ ಒಣಗಿದ ಸಂಡಿಗೆಯನ್ನು, ಗಾಳಿಯಾಡದ ಡಬ್ಬ ಅಥವಾ ಪ್ಲಾಸ್ಟಿಕ್ ತೊಟ್ಟೆಗಳಲ್ಲಿ ಹಾಕಿ ತೆಗೆದಿಡಿ. ಇಲ್ಲದಿದ್ದರೆ ಬೇಗನೆ ಹಾಳಾಗುತ್ತದೆ.

Mavinakayi(Raw Mango) Tambli

Ingredients:
1 small Raw Mango or 2 tsp chopped Raw Mango
1 cup grated Coconut
1 Red Chilly
1/2 - 3/4 cup fresh Buttermilk / Yogurt /Curd
Salt to taste
1 tsp Mustard seeds
1 - 2 broken Red Chillies
4 - 5 Curry leaves
1 tsp Oil

Recipe:
Remove the outer skin of mango and chop it into small pieces as shown in the picture below. Put 1/2 tsp oil in a pan and fry the red chilly in medium/low flame until it gives nice aroma.

Grind the mango pieces along with coconut, fried red chilly into smooth paste by adding required amount of water. (If it is frozen coconut, use hot water while grinding.)
Add this ground coconut to a vessel. Add buttermilk, required amount of water, salt(if required) to the same vessel and mix them well. (If it is yogurt/curd, put it in a mixer for few seconds before adding it to Tambli.)


Put mustard seeds, broken red chillies and oil in a pan. Once it starts spluttering, add curry leaves and add it to Tambli. Mix well before serving. It goes well with rice.
