Green (Mint, Coriander) Chutney / ಪುದಿನ, ಕೊತ್ತಂಬರಿ ಸೊಪ್ಪು ಹಸಿರು ಚಟ್ನಿ

Spicy dip prepared from Mint, Coriander leaves. Used in various Chat, Snacks recipes



Ingredients:
1/2 bunch of Mint leaves  /  ೧/೨ ಕಟ್ಟು ಪುದಿನ ಸೊಪ್ಪು
1/2 bunch of Coriander leaves  /  ೧/೨ ಕಟ್ಟು ಕೊತ್ತಂಬರಿ ಸೊಪ್ಪು
5 - 7 Green Chillies  /  ಹಸಿಮೆಣಸಿನಕಾಯಿ
Salt to taste  /  ರುಚಿಗೆ ತಕ್ಕಷ್ಟು ಉಪ್ಪು  
Grape sized Tamarind  /  ದ್ರಾಕ್ಷೆ ಗಾತ್ರದ ಹುಣಸೆ ಹಣ್ಣು
1 tsp roasted Cumin seeds powder  /  ಹುರಿದ ಜೀರಿಗೆ ಪುಡಿ
3/4 tsp Mango (Amchoor) powder  /   ಮಾವಿನ (ಆಮಚೂರ್) ಪುಡಿ
2 tsp Chat Masala  /  ಚಾಟ್ ಮಸಾಲಾ

Recipe:
Wash, clean the mint leaves and coriander leaves, keep them aside. Put all the ingredients in a mixer.

Add little amount of water and grind them into medium smooth paste as shown in the picture below. This can be used while preparing Chat items, Sandwiches, etc and can be served along with Samosas, Cutlets, etc. This can be preserved in a refrigerator for about 1 week and in freezer for about 2 months.

Sweet (Dates, Tamarind) Chutney / ಖರ್ಜೂರ, ಹುಣಸೆ ಹಣ್ಣಿನ ಸಿಹಿ ಚಟ್ನಿ

Sweet dip prepared from Dates, Tamarind. Used in various Chat, Snacks recipes 



Ingredients:

15 Dates  /  ಖರ್ಜೂರ
Grape sized Tamarind  /  ದ್ರಾಕ್ಷೆ ಗಾತ್ರದ ಹುಣಸೆ ಹಣ್ಣು
Salt to taste  /  ರುಚಿಗೆ ತಕ್ಕಷ್ಟು ಉಪ್ಪು  
Lemon sized Jaggery  /  ನಿಂಬೆ ಗಾತ್ರದ ಬೆಲ್ಲ
1/2 tsp roasted Cumin seeds powder  /  ಹುರಿದ ಜೀರಿಗೆ ಪುಡಿ
1/3 tsp Chat Masala  /  ಚಾಟ್ ಮಸಾಲಾ
1/2 tsp Chilly powder  /  ಮೆಣಸಿನ ಹುಡಿ

Recipe:
Remove the seeds of dates and put it in bowl containing around 3/4 cup of hot water for about 15 mins.

Grind dates, tamarind, jaggery, cumin seeds powder, chat masala, chilly powder, salt into smooth paste by adding little amount of water. Add required amount of water, adjust the ingredients if required and bring this to boil. (The consistency should be like that of milkshake)

This can be used while preparing Chat items, Sandwiches, etc and can be served along with Samosas, Cutlets, etc. This can be preserved in a refrigerator/freezer for about 1-2 months.
