Nippattu - Type 2

Ingredients:
4 cups Rice flour
1 cup All Purpose flour
2 cups Dalia Split / Putani
1.5 - 2 cups crushed roasted Peanuts
Salt to taste
1.5 tsp Chilly powder
1 medium sized Onion
5 - 6 strands of Curry leaves
5 - 6 Red Chillies
1/2 tsp Asafoetida powder
Oil

Recipe:
Put rice flour, salt, chilly powder, all purpose flour, asafoetida powder to a vessel. Chop the onion into small pieces and add it to the same vessel. Microwave the curry leaves for few seconds, crush the curry leaves, red chillies and add it to the same vessel. Microwave the peanuts for about 3-4 mins and keep them aside for about 10 mins. Remove the skin, crush the fried peanuts and add it to the same vessel. Crush the dalia split and add it to the same vessel. Add 5-6 tsp hot oil to the same vessel and mix them well.

Mix them well by adding sufficient amount of water.

Apply little oil on the plastic sheet, make lemon sized balls from the prepared dough as shown in the picture below.

Pat the balls using another small plastic sheet(oil applied) and a bowl as shown in the picture below.

Keep oil in a thick bottomed vessel and heat. Put patted Nippattus in oil and deep fry until they turn golden in color.


Once they are cooled to room temperature, store them in an airtight container. Serve along with coffee or tea.

Green (Mint, Coriander) Chutney / ಪುದಿನ, ಕೊತ್ತಂಬರಿ ಸೊಪ್ಪು ಹಸಿರು ಚಟ್ನಿ

Spicy dip prepared from Mint, Coriander leaves. Used in various Chat, Snacks recipes



Ingredients:
1/2 bunch of Mint leaves  /  ೧/೨ ಕಟ್ಟು ಪುದಿನ ಸೊಪ್ಪು
1/2 bunch of Coriander leaves  /  ೧/೨ ಕಟ್ಟು ಕೊತ್ತಂಬರಿ ಸೊಪ್ಪು
5 - 7 Green Chillies  /  ಹಸಿಮೆಣಸಿನಕಾಯಿ
Salt to taste  /  ರುಚಿಗೆ ತಕ್ಕಷ್ಟು ಉಪ್ಪು  
Grape sized Tamarind  /  ದ್ರಾಕ್ಷೆ ಗಾತ್ರದ ಹುಣಸೆ ಹಣ್ಣು
1 tsp roasted Cumin seeds powder  /  ಹುರಿದ ಜೀರಿಗೆ ಪುಡಿ
3/4 tsp Mango (Amchoor) powder  /   ಮಾವಿನ (ಆಮಚೂರ್) ಪುಡಿ
2 tsp Chat Masala  /  ಚಾಟ್ ಮಸಾಲಾ

Recipe:
Wash, clean the mint leaves and coriander leaves, keep them aside. Put all the ingredients in a mixer.

Add little amount of water and grind them into medium smooth paste as shown in the picture below. This can be used while preparing Chat items, Sandwiches, etc and can be served along with Samosas, Cutlets, etc. This can be preserved in a refrigerator for about 1 week and in freezer for about 2 months.
