Chat Puris served with Green Peas gravy, chopped Vegetables and Sev
Ingredients for Gravy:
1 cup Green Peas or 2 cups frozen(soaked) Green Peas / 1 ಕಪ್ ಒಣ ಬಟಾಣಿ ಅಥವಾ 2 ಕಪ್ ಹಸಿ(ನೆನೆಸಿದ) ಬಟಾಣಿ
1/4 cup soaked Green Grams / 1/4 ಕಪ್ ನೆನಿಸಿದ ಹೆಸರು ಕಾಳು
2 Green Chillies / ಹಸಿಮೆಣಸು
4 - 5 strands of Coriander leaves / ಕೊತ್ತಂಬರಿ ಸೊಪ್ಪು
3 - 4 strands Mint leaves or 1 tsp Mint leaves powder / ಪುದಿನ ಸೊಪ್ಪು
4 - 5 Pepper / ಕಾಳು ಮೆಣಸು
2 - 3 Cloves / ಲವಂಗ
3/4 - 1 inch sized Cinnamon / ಚೆಕ್ಕೆ
1 - 2 Bay leaf / ಚೆಕ್ಕೆ ಎಲೆ
Grape sized Tamarind / ಹುಣಸೆ ಹಣ್ಣು
Salt to taste / ರುಚಿಗೆ ತಕ್ಕಷ್ಟು ಉಪ್ಪು
2 - 3 tsp Oil / ಎಣ್ಣೆ
10 - 12 Cumin seeds / ಜೀರಿಗೆ
1 medium sized Onion / ಈರುಳ್ಳಿ
2 - 3 cloves Garlic / ಬೆಳ್ಳುಳ್ಳಿ
Small piece of Ginger / ಶುಂಠಿ
Pinch of Asafoetida powder / ಇಂಗು
Optional (ಬೇಕಿದ್ದರೆ ಮಾತ್ರ) Ingredients:
Chilly powder / ಮೆಣಸಿನ ಹುಡಿ
Roasted Cumin or Coriander seeds powder / ಹುರಿದ ಜೀರಿಗೆ ಅಥವಾ ಕೊತ್ತಂಬರಿ ಹುಡಿ
Chat Masala / ಚಾಟ್ ಮಸಾಲಾ
Corn or Rice or Wheat or All Purpose flour (For Thickening) / ಜೋಳ ಅಥವಾ ಅಕ್ಕಿ ಅಥವಾ ಗೋಧಿ ಅಥವಾ ಮೈದಾ ಹುಡಿ
Ingredients for Serving:
25 - 30 Chat Puris / ಚಾಟ್ ಪೂರಿ
1 cup cooked Green Peas / ಬೇಯಿಸಿದ ಬಟಾಣಿ
1 Tomato / ಟೊಮೇಟೊ
1 Onion / ಈರುಳ್ಳಿ
6 - 8 strands of Coriander leaves / ಕೊತ್ತಂಬರಿ ಸೊಪ್ಪು
1 small Carrot / ಕ್ಯಾರಟ್
2 cups Sev (Bombay Mixture) / ಸೇಮೆ ಅಥವಾ ಬಾಂಬೆ ಮಿಕ್ಸ್ಚರ್
Optional (ಬೇಕಿದ್ದರೆ ಮಾತ್ರ) Ingredients:
Chilly powder / ಮೆಣಸಿನ ಹುಡಿ
Chat Masala / ಚಾಟ್ ಮಸಾಲಾ
Lemon / ನಿಂಬೆ ಹುಳಿ
Green (Mint, Coriander) Chutney / ಪುದಿನ, ಕೊತ್ತಂಬರಿ ಸೊಪ್ಪು ಹಸಿರು ಚಟ್ನಿ
Sweet (Dates, Tamarind) Chutney / ಖರ್ಜೂರ, ಹುಣಸೆ ಹಣ್ಣಿನ ಸಿಹಿ ಚಟ್ನಿ
Gravy Recipe:
Cook soaked green grams and soaked green peas together in a pressure cooker by adding salt and sufficient amount of water. (3-4 whistles)
Put cumin seeds, pepper, 1 bay leaf, cinnamon, cloves, asafoetida, 2 tsp oil in a pan and heat. After 1 min, add ginger garlic paste and fry them for about 1-2 mins. Add chopped onion and fry them for about 2 mins. Grind this fried onion masala, coriander leaves, mint leaves, green chillies, tamarind, cooked green peas, green gram mixture into smooth paste by adding sufficient amount of water.
Pour this ground masala in a vessel. Add sufficient amount of water, salt and mix well. The consistency of the gravy should be like thin milkshake. (Adjust the optional ingredients if required. Keep the gravy in low flame for about 20-30 mins and keep stirring the gravy once in 5 mins. Take off the bay leaf from the gravy.
Masala Puri Recipe:
Cook soaked green peas by adding little amount of water and salt. (Can be cooked along with Masala gravy and can be kept aside)
Chop onion, tomato, coriander leaves into small pieces as shown in the picture below. Grate the carrot as shown in the picture below.
Take 6-7 Chat puris and mash them little bit as shown in the picture below.
Garnish little amount of cooked green peas as shown in the picture below.
Sprinkle little amount chat masala and chilly powder.(Add hot green chutney or sweet tamarind chutney if required)
Take around 1.5 cup of prepared gravy and pour it over the mashed puris as shown in the picture below.
Garnish with chopped tomato, onion, coriander leaves, grated carrot. Sprinkle little amount of bombay mixture / Sev as shown in the picture below. Garnish 2-3 drops of lemon juice(optional) and serve immediately. Above mentioned ingredients will serve 4-5 plates of Masala Puri.

Tips (ಸಲಹೆ):
* Gravy can be prepared in advance but it should be hot while serving
* Taste the gravy while boiling and adjust the optional ingredients according to your taste
* Left over gravy can be stored in refrigerator or freezer

* ಉಳಿದ ಗ್ರೇವಿಯನ್ನು ಫ್ರಿಡ್ಜ್ / ಫ್ರೀಜರ್ ನಲ್ಲಿ ಇಟ್ಟು, ಬೇಕಾದಾಗ ಉಪಯೋಗಿಸಿ

Taste of Masala Puri is not unique. It differs from one place to another! In places like Mumbai the Masala Puri will not be served with the gravy or masala. There is a huge difference in taste between the masala puris served within bangalore itself (Gaadis, Chat Centers, etc..)
Some people like their masala puris to be very spicy, some people like it sweet, some people like it dry. It all depends on what taste we are used to.
It would be better if we keep on tasting the gravy at least 8-10 times while cooking until we get the taste according to our taste buds.
According to me the recipe that I posted here tastes like the one we get in Bangalore Gaadis. I have received the same feedback from many people who have tried it!

I just tried your masala puri recipe - at 10 in the night, coz it looked yummmy and it had been ages since I had tasted it. Came out very good. I just wanted to confirm something in this recipe. Green Peas 2 cups soaked and pressure cooked. Do we have to use whole 2 cups for grinding along with Hesaru kaalu? This part was not clear. But I see you keep some cooked peas to top on pooris also. So please let me know how much peas to grind?

OMG! Would die looking at this. Have been looking for typical gaadi masala recipe. By reading the comments I have no doubt this is the one I have been looking for. But this masala is greenish while gaadi masala usually will be reddish (you know what I mean :)). Why is it so? Pls excuse me as I am an amateur cook.

Yes, as I mentioned already in the comments section, the Masala Puri taste varies from region to region. This looks similar to the one which I used to taste in Bangalore Gadi Masala Puri.
If you want red gravy, you can try adding Red Chillies instead of Green Chillies and also adding some turmeric powder.

Usually all the grams like Green Gram Seeds, Green Peas, Channa, etc should be soaked in water for 8-10 hrs.

I usually add finely ground powder of 1 star anise(Hindi - Anasphal, Malayalam -Takkolam,
Tamil - Anashuppu), when the masala is boiling. It will give you more of a gaadi taste. Please try it once.

I tried Masala puri also... :) I like masala puri very much. After coming to USA i didnt get anywhere masala puri which i used to get in b'lore or m'lore :) so thought to do at home and i followed your recipe...It tasted same as that of b'lore gaadi masala puri... :)

Yes, you can prepare the gravy a day ahead and use but refrigerate once it is completely cooled to room temperature.
If there is some left over gravy, you can also keep it in freezer and use it whenever you want but the taste is not as good as the fresh one we prepare....
